It’s good luck to new look Bistro Les Chats when it opens its doors on Friday 13 November.
The town’s popular French restaurant is making a comeback with a new menu and a new chef at the helm – just over a month after it closed in October, to the surprise of lots of people.
The Bistro will be open for lunch and dinner on Wednesdays, Thursdays, Fridays and Saturdays and diners can see the new menus and reserve tables online now at www.leschats.co.uk
Shareen Campbell and Phil Saunter, owners of Bistro Les Chats, pictured, said: “Just five weeks ago we very reluctantly closed the door on the bistro, to concentrate on Los Gatos Tapas Bar. In the last month, we have been overwhelmed with good will and support, countless enquiries as to the future of the restaurant and entreaties to reopen it as soon as possible. Many people have told us how much they miss it, while continuing to support us in Los Gatos with its very different style. The message we received loud and clear was ‘Swindon needs Bistro Les Chats.’
“We took a short holiday to relax and think about it from a distance. While in Spain, we missed Los Gatos and when in France, we were reminded why we’d opened Les Chats five years ago and missed it even more. One of our regular customers had put us in touch with a talented young chef and his partner who were looking for an opportunity, and on return from our break, we met, sampled his stunningly good food – and agreed to work together.
“We want to thank everyone for their support, loyalty and continuing use of the restaurant and we’re looking forward to welcoming diners to our slightly more European bistro.”
The new chef is Alessandro Gianati who has 10 years’ cooking experience ranging from Lombardy to Gloucestershire, including three years’ training under Michelin-starred Paolo Frosio. His partner Valentina Vergari is an experienced front of house waitress and manager and is looking forward to meeting new and regular customers at Bistro Les Chats.
Chef Peter Matysek, who worked at Bistro Les Chats last year before moving to Los Gatos, will rejoin the Bistro kitchen team and Miles Andrews, well known to many diners after his years of cheerful service at Bistro Les Chats, is delighted to be returning to work with Valentina.
The menus, which will continue to change every few weeks with the seasons, will be similar in style but will use Alessandro and Peter’s skills and experience to offer a broader range of modern European cooking.
Express and fixed price lunch and A la Carte menus will be available as before, as well as some short tasting menus. The Les Chats wine list will develop from the exclusively French to include some fantastic wines from Spain, Italy, and the UK, as well as some old favourites from France.
Shareen and Phil will continue to manage the restaurant and support the small but perfectly formed staff team through the busy period up to Christmas.
