excellent with gin!

• You need:
1 gallon cold 'a tar 2 lemons

lzlb. sugar it 2 tables oons white
7 heads eldcrfL,oser wire vinegar
Bring the water to the boil and pour it over the sugar; when
cold, add the flowerheads, lemon slices and white vine vinegar.
Cover and leave to stand for 2+ hours. Syphcn or strain off
and bottle, using; strong bottles, preferably with screw tons.
After about 10 days to a fortni>ht it should be ready to drink
and yry fizzy - as it relies on natural yeast the fizz doesn't
always happen, but it's still very good without.

You need:

One bottle cider (if dry, add a few lum s of ,ugar)
2 bottles soda water
1 small glass brandy
1 lemon
• Peel the lemon thinly, and put the rind with the Cider in a
jug or bowl, with a. sprig of borage or a few strips of cucumber
rind. Add the brandy immediately and the soda wetsr 10 minutes
later. Any fresh fruit sliced up will add to the taste of the
cup, especially if soaked in brandy for a few hours beforehand.
Serve chilled.
